Integrated KMS only
This report is only available to companies using an integrated KMS.
The Kitchen Prep Performance report shows how well each location performs in the kitchen through the day, highlighting where service is consistent and where it could improve.

60, 30 or 15 Minute Periods
Orders are grouped into 15, 30 or 60-minute time slots through the day, with performance based on the average results in each slot.
At the top of each section, two tables summarise performance for the orders in it, with the full data beneath.
Performance Summary
The average order time for all orders in the section, based on the Performance Metric filter.
The range most orders (around 70%) were completed within. For example, an Average Time of 03:30 with a Time Deviation of 00:30 means around 70% of orders took between 03:00 and 04:00. See time deviation.
Late Orders (Total Order Time)
The target total order time, if set. See target order times.
The percentage of orders in the section with a total order time over the target.
Report data
When the time slot started, based on the Analysis Style filter.
The number of orders passing through the KMS in the time slot.
The percentage of orders in the time slot with a total order time over the Target Time, if set.
The average time orders spent in kitchen preparation in the time slot.
The average time orders spent waiting for customer collection in the time slot.
The average time orders took from start to finish on the KMS in the time slot.
The longest time recorded in the time slot, based on the Performance Metric filter.
Based on the Performance Metric filter, how well orders in this time slot performed compared with all other orders in the same section. It doesn't use the Target Time. Instead, it shows how far orders in this time slot deviated from the Average Time, with green for quicker and red for slower. See visual indicators.
Individual Transactions
Detailed performance for each order through the day, including event timestamps, with performance measured against other orders in the same period.

KMS Data
How the figures in this report are worked out.
Performance metrics: time deviation
As well as the Average Time for an order to flow through the kitchen, the report shows the Time Deviation. Using standard deviation, this is the range most orders (about 70%) fall within. For example:
| Site 1 | Site 2 | |
|---|---|---|
| Average Time | 03:30 | 03:40 |
| Time Deviation | 00:45 | 00:20 |
Looking only at Average Time, Site 2 seems slower than Site 1, by 10 seconds.
But Time Deviation shows Site 2 is more consistent, with most orders taking between 03:20 and 04:00. Site 1 is less consistent, with the same share of orders taking between 02:45 and 04:15.
Performance metrics: visual indicators
Each row has two performance indicators.
At the end of each row, a bar shows how far the order time on that row is from the average, compared with other orders in the same section.
Each row also has one of four icons:
The order time is close to the average for the section. Statistically, within ±0.5 standard deviations: the Average Time ± half the Time Deviation.
The order time is noticeably faster than average. Statistically, between −0.5 and −2 time deviations.
The order time is noticeably slower than average. Statistically, between +0.5 and +2 time deviations.
The order time is far from average: a statistical outlier, showing unexpected performance. Statistically, more than 2 standard deviations either way: outside the Average Time ± twice the Time Deviation.
Data: target order times
Target order times are set for the company, and can be overridden for a site, a location or both. The target shown depends on the View Type filter:
Data: data points and glossary
When the order first reaches the KMS.
When the order is bumped off the kitchen screens and appears on the order ready board. Uses the latest if there are several, for example if an order was restored.
When the order is cleared off the order ready board. Uses the latest if there are several, for example if an order was restored.
The time between Order Start and Order Ready: the time the order spent in the kitchen.
The time between Order Ready and Order Collected: the time the order spent at expo or on the order ready board.
The time between Order Start and Order Collected: the full order time.
