Report Information
The Kitchen Prep Performance report provides insight into how effectively locations perform in the kitchen throughout the day, highlighting where service levels are consistent and where there are opportunities for improvement.
This report is available only to companies that use integrated KMS.

Report Output
Analysis Style: 15, 30, 60 Minute Periods
When the Analysis Style filter is set to "60/30/15 Minute Periods", the report groups orders into 15-, 30-, or 60-minute time periods throughout the day, highlighting performance based on the average results within each period.
The report has two sections, with a summary of performance and late orders at the top and the report data beneath.

At the top of each section there are two tables summarising performance for orders in this section, with the full output of report data beneath. The tables below summarise the data shown in each section.
Performance Summary
| Average Time | Displays the average order time for all orders within this section per the Performance Metric report filter option selected. |
| Time Deviation | Displays the range within which most orders (around 70%, assuming roughly normal distribution) were completed. For example, an Average Time of 03:30 with a Time Deviation of 00:30 highlights that around 70% of orders took place between 03:00 and 04:00. |
Late Orders (Total Order Time)
| Target Time | This shows the target Total Order Time, if configured. |
| Late Orders | Shows the percentage of orders in the section with a Total Order Time that exceeded this target. |
Full Report Data
| Transaction ID | Displays the ID of the transaction within Cinchio Back Office. |
| Source | Displays the source of the original transaction. |
| Order Ref | Displays the customers order reference, if applicable. |
| Order Time | Displays the time that the order should be ready for collection. |
| Order Start | Displays the time that the order first appeared on the KMS. |
| Order Ready | Displays the time that the order was marked as ready by the kitchen on the KMS. |
| Order Coll'd | Displays the time that the order was marked as collected on the KMS. |
| Prep Time | Displays how long the order spent in kitchen preparation. |
| Expo Time | Displays how long the order spent waiting for customer collection. |
| Total Time | Displays how long the order took from start to finish on the KMS. If the overall order time exceeds the Target Time, this is highlighted in red. |
| Performance |
Per the Performance Metric report filter option, displays a visual indication of how well each order performed in relation to all other orders within the same section of the report. This doesn't take into consideration the Target Time; instead, it displays how far each order deviated from the Average Time for orders in this section, with green representing quicker orders and red representing slower orders. |

Analysis Style: Individual Transactions
When the Analysis Style filter is set to "Individual Transactions", the report provides detailed performance for each order throughout the day, including event timestamps and performance measured in the context of other orders within the same period.

Per the Performance Metric report filter option, displays a visual indication of how well orders in this time slot performed in relation to all other orders within the same section of the report. This doesn't take into consideration the Target Time; instead, it displays how far orders during this time low deviated from the Average Time for orders in this section, with green representing quicker orders and red representing slower orders. |

Performance Metrics: Time Deviation
In addition to providing the Average Time for an order to flow through the kitchen, the Time Deviation is also shown. Using Standard Deviation, this highlights the range in which the majority of orders (about 70%) fall within. For example:

Taking just the Average Time into consideration, it appears that Site 2 isn't performing as well as Site 1 as the average order time is 10 seconds slower.
However, taking Time Deviation into account, we can see that Site 2 is more consistent in their service with the majority of orders taking place between 03:20 and 04:00 minutes, whereas Site 1 is less consistent with the same proportion of orders taking between 02:45 and 04:15 minutes.
Performance Metrics: Visual Indicators
Against data within the report their are two performance indicators.
At the end of each row there is a visual indication of how far away from the average order time the order(s) on that line is, compared to other orders within the same section of the report.
Additionally, against each row you'll see one of four icons to help highlight the performance for that row.

The order time is reasonably close to the average order time of orders in that section. Statistically, this falls within ±0.5 standard deviations, i.e. orders with an order time that is within the Average Time ± half of the Time Deviation time shown. |

The order time is noticeably faster than the average order time of orders in that section. Statistically, this falls between -0.5 and -2 Time Deviations. |

The order time is noticeably slow than the average order time of orders in that section. Statistically, this falls between +0.5 and +2 Time Deviations. |

The order time is significantly far away from the average order time of orders in that section and is a statistical outlier, indicating unexpected performance. Statistically, this applies to orders >2 standard deviations or <-2 standard deviations, i.e. orders with an order time that is outside of the Average Time ± twice the Time Deviation time shown. |
Data: Target Order Times
Target Order Times are set at Company level, with the option to apply an override at Site level and/or at Location level. The Target Order Time shown in the report depends on which View Type filter option is used:
- Consolidated: The company level target time is used in all cases.
- Split By Site: Per section, if the site has an override target time that is used. If no override exists, the company level target time is used.
- Split By Location: Per section, if the location has an override target time that is used. If not, if the site that the location belongs to has an override target time that is used. If no override exists, the company level target time is used.
Data: Data Points & Glossary
| Order Start | Timestamp that the order first reaches the KMS. |
| Order Ready | Timestamp that the order is bumped off the kitchen screens and becomes available on the order ready board. (Uses the latest if multiple exist in cases where an order was restored.) |
| Order Collected | Timestamp that the order is cleared off the order ready board. (Uses the latest if multiple exist in cases where an order was restored.) |
| Prep Time / Preparation Performance | The time between the Order Start & Order Ready timestamps, representing the time that the order spent in the kitchen. |
| Expo Time / Expo Performance | The time between the Order Ready & Order Collected timestamps, representing the time that the order spent at expo or on the order ready board. |
| Total Time | The time between the Order Start & Order Collected timestamps, representing the full order time. |
Should there be any incomplete data for orders flowing through the KMS:
In cases cases where Order Ready is not available due to KMS configuration, the Order Ready time uses the Order Start timestamp.
In cases where Order Collected is not available due to orders timing out when not marked as collected, the Order Collected time users the Order Ready timestamp.
In cases where Order Start is missing, or multiple datapoints are missing, the order is omitted from KMS data reporting.
